Although none of her kids are interested in cooking these old-school Chinese dishes, Wong keeps making them while the family gets together (her sons stay in remote places). “Normally, I will cook while all the youngsters are collected because the kids grew up on this food, and these dishes are just so clean to prepare dinner,” she says, laughing.
HAIRY GOURD WITH GLASS NOODLES
Serves four
50g glass noodles
1tbsp oil
three cloves garlic, chopped
20g dried shrimp, soaked in water and chopped (reserve shrimp water)
One hairy gourd (500-600g), washed, peeled, and cut into strips
1 tsp mild soy sauce
½ tsp salt
Dash of pepper
Soak glass noodles in bloodless water until gentle. Cut into shorter strands. Heat the wok with oil and add garlic and dried shrimp. Fry till aromatic. Add furry gourd, stir, and water—cover wok to cook and melt hairy gourd. Add glass noodles and seasoning. Simmer for a while and serve straight away.
